Not Your Average Sandwich
A couple of slices of bread, butter, and a slice of ham. That's all you need for a sandwich right? WRONG. Sandwiches are some of he easiest things to take with you for a picnic but you don't want to waste your time with basic playground sandwiches. Get in the kitchen and get creative and your body will thank you. For something particularly delicious, grab yourself some wholemeal or sourdough bread and pack it full of spicy grilled chicken, avocado, natural yoghurt, tomatoes, red onion, and a drizzle of sweet chili sauce. The real question will be how many you can eat without being too full to move afterwards.
This is one of those dishes that you can customize to make it exactly how you like it. You don't even have to use quinoa - you can opt for brown rice or bulghur wheat if you'd rather. But, quinoa is the healthiest option. I like to add feta, chorizo, spinach, tomato and avocado to a bowl of quinoa. Mix it all up and then drizzle it with olive oil, lemon juice, and just a pinch of salt. Mix it all up again so the flavours blend nicely and there you have it. This salad is easy to transport, filing, delicious, and healthy. The ultimate combination for a winning picnic dish.

If you like wraps then you are going to love lavash. Lavash is a wholemeal alternative to a regular tortilla wrap from the middle east Grab your flatbread and smear some fat free Greek yoghurt on it as a base. Next pile on smoked salmon, rocket, and alfalfa sprouts and drizzle the whole thing with lemon juice.. If you're a pepper fan then grind some on top. Then, wrap the whole thing up and get ready for one of the most mouth-watering picnic treats you've ever experienced.
No-Mayo potato salad with herbs
On a hot day, the last thing you want to be eating and transporting is mayonnaise. Potato salad with mayonnaise is fattening, heavy, and the last thing you want after it's been sat in a warm basket for an hour or two. This recipe uses a delicious vinaigrette to flavor the potatoes. To make the vinaigrette you'll need white wine vinegar, cold pressed oil, pickled capers, loosely packed herbs, and spring onions. mix it all together and pour it over your cooked potatoes. Throw in some celery stalks, diced apple, chopped kale and chickpeas to give the dish a bit of a crunch. This is a dish that never fails to impress.
